Sudanese recipe: Peanut chicken

A bowl of rice and peanut chicken on topI got this recipe from the World Food Night page on the Refugee Action UK website.  World Food night is a fundraising campaign, whereby you’re encouraged to host a dinner on the 1st March 2014, cook something from another land and ask your guests to donate to the Refugee action cause.  Check it out.

When signing up to the fundraising campaign, you are given a pack, which includes recipes that some volunteers or refugees have provided.

This particular recipe, peanut chicken, is from South Sudan and is very simple to make.  Just serve with some rice a vegetables.


  • 2 tablespoons peanut oil (can use vegetable / sunflower oil)
  • 2 chicken breasts, diced
  • 1 onion, finely diced
  • 1 tomato, diced
  • 1 dash garlic powder
  • 2 tablespoons peanut butter
  • 1 cup water


Add half of the oil to a frying pan and then cook the chicken for a couple of minutes until very lightly browned.  Remove the chicken and set aside.

Add the remaining oil and butter to the pan.  Add the onion, tomato and garlic powder and cook for a couple of minutes until the onion is soft.

Return the chicken back to the pan and stir in the peanut butter well.  Add the water.  Bring the mixture to the boil and then simmer for about 6 minutes.  The peanut chicken is now ready to serve on rice and vegetables.
