Italian recipes: Torta Di Mele (Apple cake)
The direct translation of Torta Di Mele is apple pie, but it is more like an apple cake. This is a family recipe of “Francesca from Italy” and it was quite simple and tasted amazing, especially still warm from the oven.
I enjoyed this with a cup of coffee and some cream.
- 100 gr room-temperature butter (extra for greasing)
- 150 gr sugar
- 1 egg
- 1 egg-yolk
- 250 gr plain flour
- 16 gr (or 2 teaspoons) baking powder
- pinch salt
- 125 ml whole milk
- grated lemon rind from 1 lemon
- 3-4 apples
- 2 tablespoons brown sugar
Turn the oven to 200 C / 390 F.
Grease a springform cake tin with butter and sprinkle with flour.
In a large bowl, beat the sugar and butter together until creamy. Add the eggs and continue beating.
Add the flour, baking powder, salt, milk and lemon rind to the bowl and mix well. Add 1 half of 1 apple, that has been peeled and cut into small cubes. Reserve the remaining 2-3 1/2 apples for the topping.
Pour the cake mixture in the cake tin.
With the remaining apples, peel and then slice into good sized slices. Arrange these on top of the cake mixture.
In a small bowl, mix the brown sugar and a shake of ground cinnamon. Sprinkle this mixture over the apples.
Bake in the preheated oven for around 40 minutes. Allow the Torta Di Mele to cool for about 10 minutes before lifting out of the cake tin and cooling on a rack. Delicious.
