My Oma always cooked green beans in tomato sauce, especially in summer time when she had so many green beans from her vegetable garden, she would make a huge amount of this recipe and then freeze in meal sized portions. I always think of Oma when I make this recipe.
This isn’t particularly German and I saw on a travel program almost exactly the same recipe in Italy – which is why it’s filed under Italy and not Germany!
- olive oil for frying
- 1 brown onion, chopped
- sprinkle dried chilli (optional)
- small bunch flat leaf parsley, chopped
- 1 can plump / whole tomatoes
- 200 gr green beans
- pinch ground / grated nutmeg
- pinch oregano
- salt and pepper
- Serve with good crusty bread
In a large saucepan or frying pan, add the oil, onions, chilli (if using) and parsley and cook for a couple of minutes.
Add the tomatoes and stir all together. Squash the tomatoes with the back of your spoon. Add the washed green beans, nutmeg, oregano, salt and pepper to taste and simmer for about 15 minutes or until the beans are cooked.
Serve the green beans as a side dish, or for two people with a good crusty bread.
