Greek recipes: Tzatziki
Tzatziki is also one of those dips or sauces that it goes with so much. Especially lamb and grilled chicken. A match made in heaven. Perfect for my latest Greek obsession during this summer.
- 250 gr Greek yoghurt (no flavouring)
- 2-3 garlic cloves, cut finely
- 1 small cucumber
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- 1 tsp dill
- good pinch salt
Grate the cucumber and mix in a pinch of salt. Place in a sieve over a bowl and await for all the water to drain out of the cucumber.
In bowl, mix all the ingredients, including the drained cucumber. Check the taste – as you may wish to add more garlic / salt / vinegar to your taste.
Cover and store the tzatziki in the refrigerator for at least an hour before serving.
