German Recipes: Kartoffelsuppe (potato soup)

I learnt this Kartoffelsuppe / potato soup from my mother.  It’s a fantastic soup for the winter, especially on a Sunday night. It’s very hearty and with some croutons or crusty bread it really fills the hungry. I always think of home when I make this soup – it’s very comforting.

This is a family recipe so please give credit where credit is due:


  • 1 large brown onion, finely chopped
  • 30 gr butter
  • bunch of parsley, chopped
  • 500 gr potatoes, peeled and chopped into cube
  • 3 large carrots, peeled and chopped into similar size as potato cubes
  • 2 tablespoons plain flour
  • 2 litres water
  • 2 beef stock cubes
  • salt and pepper
  • 1 tablespoon olive oil
  • 4 sausages (you can use frankfurters, bratwurst, brockwurst)


In a large pot, add the butter, oil, most of the parsley (save some for serving) and the onion. Fry for a couple of minutes.
Add the potatoes and carrots. Stir in. Sprinkle over the flour and stir well into the pot. Then add the water. Bring this to the boil and then simmer for 40 minutes.
Add the mixture to the blender and blend until completely smooth. Add back to the pot and add the crushed stock cubes, salt and a good amount of pepper. It’s best to make this soup slightly peppery (to taste).
Slice the sausages and add to the potato soup and heat together for 2 minutes. This Kartoffelsuppe can be served with the chopped parsley and croutons.  Enjoy!
